Hello There Lovely Ones
A couple of days ago I made brownies for a friend of ours that had come to visit for the first time in a while and as I was baking them I thought it would be fun to share with you my tried and tested recipe.
So here’s what you will need;
150g Dark Chocolate
100g Unsalted Butter
200g Soft Light Brown Sugar
2 Medium Eggs
75g Self Raising Flour
40g Cocoa Powder
1 Bag of Milk Chocolate Chunks
Step One – Preheat your oven to 170 Degrees Centigrade
Step Two – Melt the chocolate and butter
In a large microwave safe bowl, place the butter and chocolate, (I like to cut my butter into smaller chunks to make everything melt more evenly) and pop into the microwave for 60 seconds, taking out and stirring after 30 seconds have passed.
Step Three – Add sugar and eggs
Once the butter and sugar have melted and are smooth in consistency, add in the sugar. Stir together until all combined and no pockets of sugar remain, at this stage add in the eggs, one at a time and mix together until the mixture is smooth, glossy and evenly combined.
Step Four – Add the Flour/Cocoa Powder and the Chocolate Chunks
Seive in the Flour and Cocoa Powder and mix in until everything is combined, making sure to scrape the sides and the bottom of the bowl to ensure that nothing is missed. Once this has been combined, add in the chocolate chunks and continue to mix until evenly distributed.
Step Five – Place into baking tin
Line a 24cm x 24cm square baking tin with baking paper (I like to use a tiny bit of brownie mix to get the paper to stick to the tin otherwise it can move around) and then add in the brownie mixture. Make sure to push the mixture into all the edges and the corners and make sure to smooth off the top so it bakes evenly.
Step Six – Bake
Pop your tin into the preheated oven for around 18 minutes. Once the time is up, remove from the oven and cool completely. When you first take the brownie out it will not look fully cooked, but will continue to cook and firm up once you remove it from the oven (trust me I am always tempted to put it back it, but it will be as hard as a rock if you do!)
Step Seven – Slice, Serve and Enjoy

Once cooled the brownie will be crumbly on the top and edges but gooey and fudgey in the middle. Because ours was still slightly warm when I initally served it, I ended up using a fork with mine but the boys just went straight in with their hands.
